Spring: Guinness and Dubliner Cheese Dip with Caramelized Onions
I first made this recipe back in 2018, and it has quickly become a favorite among family and friends. While this dip can be enjoyed year round, I recommend making it for all your St. Patrick’s Day soirées and get togethers! The best part? You get to open a Guinness to make it and drink the leftovers! Slainte!
THE RECIPE:
1 large Spanish onion, thinly sliced
Kerry Gold Irish butter, as needed
7 oz block of Kerry Gold Dubliner Cheese, finely grated
8 oz block cream cheese
2 Tbsp coarse country style mustard or whole grain mustard
1/4 cup mayonnaise
1/4 cup Guinness (2 fl oz)
Salt, Pepper, and Garlic Powder, to taste
1 small bunch scallions, thinly sliced
Crostini or rye crackers, to dip
TO MAKE:
1. Preheat the oven to 400* F
2. In a large mixing bowl, combine the cream cheese, mayonnaise, mustard, Guinness, and 3/4 of the grated Dubliner cheese. Set aside.
3. In a large pan over low heat, caramelize the onions.
4. Allow caramelized onions to partially cool before adding to the cheese mixture.
5. Season to taste with salt, pepper, and garlic powder.
6. Lightly grease a small baking dish or bowl.
7. Transfer dip mixture into the baking dish or bowl, and bake in the oven for 15-25 minutes (or until it is bubbling.)
8. Remove dip from oven and top with sliced scallions and remaining grated cheese.
9. Set the oven to broil and cook until a light crust has formed at the top of the cheese dip.
10. Remove dip from oven and serve with crostini or crackers. We also recommend dipping carrots in this rich + hearty cheese dip!
